Ingredients

Scale
  • 1 cup mashed ripe bananas (about 2-3)
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 cup melted butter (or coconut oil)
  • 3/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a loaf pan.
  2. In a large bowl, mash the bananas until smooth. Stir in pumpkin puree, eggs, melted butter (or coconut oil), brown sugar, maple syrup, and vanilla until combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground cloves.
  4. Gently fold the dry ingredients into the wet mixture until just combined. If desired, stir in walnuts or chocolate chips.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack.
