- 1.3 lbs ground turkey (extra lean)
- 6 small links chicken maple sausage
- 1 sweet onion (chopped)
- 3 cloves garlic (minced)
- 1 yellow bell pepper (diced)
- 1 orange bell pepper (diced)
- 1 can (29 oz) pumpkin purée
- 1 can (28 oz) diced tomatoes
- 1/2 cup chicken broth
- 2 tbsp chili powder
- 1 tsp oregano
- 1 tsp cumin
- 2 tsp brown sugar
- 1/2 tsp cayenne pepper (optional)
- 4 tbsp olive oil
- Sea salt and black pepper to taste
Instructions
- Prepare the sausages by slicing or removing them from their casings. Set aside with ground turkey.
- In a heavy-bottomed pot, heat 2 tbsp olive oil over medium heat. Sauté garlic and onions until translucent, then add bell peppers and cook for another 5 minutes.
- Add remaining olive oil and brown the ground turkey and sausage for about 10 minutes, seasoning with salt and pepper.
- Stir in sautéed vegetables, diced tomatoes, pumpkin purée, and all spices. Mix well.
- Reduce heat to low and let simmer for 1.5 to 2 hours, stirring occasionally.
- Adjust seasoning as needed before serving hot with toppings like cheese, green onions, or sour cream.
