  • 2 cups canned pumpkin (not pie filling)
  • ⅔ cup brown sugar
  • ⅔ cup granulated sugar
  • 1 cup applesauce or canola oil
  • 3 eggs (room temperature)
  • 1 tbsp vanilla extract
  • 1½ cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9×5 inch loaf pans.
  2. In a mixing bowl, whisk together the flour, salt, baking powder, baking soda, and pumpkin pie spice.
  3. In another bowl, mix the canned pumpkin, brown sugar, granulated sugar, applesauce (or oil), eggs, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; do not over-mix.
  5. Gently add both types of chocolate chips until evenly distributed.
  6. Divide the batter between the prepared pans and top with reserved mini chocolate chips if desired. Bake for about an hour or until a toothpick comes out clean.
