- 95 grams active sourdough starter
- 390 grams filtered water
- 100 grams pumpkin puree
- 530 grams bread flour
- 2 teaspoons fine sea salt
- 1 tablespoon ground cinnamon
- ½ tablespoon pumpkin spice
- ¼ cup sugar
Instructions
- Feed your active sourdough starter at least 4 hours before starting.
- In a mixing bowl, combine inactive sourdough starter and lukewarm filtered water. Mix in all-purpose flour until smooth, then add pumpkin puree and active starter.
- Gradually add remaining filtered water, bread flour, sea salt, cinnamon, pumpkin spice, and sugar; mix until a shaggy dough forms.
- Knead on a floured surface for about 10 minutes until smooth and elastic.
- Place in a covered bowl to rise in a warm spot for 1-2 hours or until doubled in size.
- Shape the dough into a loaf and let it rest on parchment paper for another hour while preheating your oven to 450°F (232°C).
- Bake for about 60 minutes or until golden brown and the internal temperature reaches 200°F (93°C).
