  • 1 bell pepper, diced
  • 1 medium carrot, peeled and sliced
  • 1 can (14 oz) diced tomatoes
  • 3 cups low-sodium chicken broth
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • Optional: 1-2 fresh chili peppers, finely chopped (for extra spice)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent; add minced garlic and cook until fragrant.
  2. Add diced bell pepper and sliced carrot; cook for about 3-4 minutes until slightly softened.
  3. Stir in the diced tomatoes along with their juices. Pour in the chicken broth and add all spices. Bring to a boil.
  4. Reduce heat to medium-low and add shrimp. Cook for 5-7 minutes until shrimp are pink and opaque.
  5. Remove from heat; stir in fresh lime juice and garnish with cilantro if desired before serving hot.
