  • 5 cups rhubarb (fresh or frozen, chopped)
  • 3/4 cup granulated sugar
  • 1/4 cup corn starch
  • 1/2 cup cold butter (cubed)
  • 1/2 cup brown sugar
  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 or 9×9 inch baking pan.
  2. In a large bowl, combine rhubarb, granulated sugar, and corn starch. If using fresh rhubarb, use only 2 tablespoons of corn starch. Spread this mixture in the prepared baking pan.
  3. In another bowl, mix together butter, brown sugar, oats, and flour until crumbly. Evenly distribute the topping over the rhubarb mixture and press down gently.
  4. Bake for 35-40 minutes until the topping is golden brown and the edges are bubbly. Allow to cool for about 10 minutes before serving warm with ice cream.
