  • 2½ to 3 pounds baby back ribs
  • â…“ cup light brown sugar
  • 2 tablespoons granulated sugar
  • 2 tablespoons onion powder
  • 1 tablespoon kosher salt
  • 1 tablespoon smoked paprika
  • 2½ teaspoons fresh cracked black pepper
  • 2 teaspoons ground mustard
  • 1 teaspoon cumin
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground nutmeg
  • ½ cup barbecue sauce
  • 3 tablespoons light brown sugar

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, mix the spices: brown sugar, granulated sugar, onion powder, salt, paprika, black pepper, mustard, cumin, cayenne pepper, and nutmeg.
  3. Remove the membrane from the rib rack and wrap in foil.
  4. Apply the spice rub generously to both sides of the ribs.
  5. Seal the foil tightly and bake for about 2 hours and 30 minutes.
  6. For caramelization, increase the oven temperature to broil; mix barbecue sauce with brown sugar and spread over ribs before broiling for an additional 2-3 minutes.
