  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine orange zest, juice, honey, soy sauce, garlic, thyme, rosemary, salt, and pepper to create the marinade.
  3. Place the chicken in a roasting pan and pour the marinade over it. Let it marinate for at least 30 minutes.
  4. Insert quartered onion into the chicken cavity for added flavor.
  5. Pour chicken broth into the pan, then roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting every 20 minutes.
  6. Let the chicken rest for 10 minutes before carving.
