  • 3 white onions, thickly wedged
  • 5 cloves garlic (skin on)
  • 3 mixed peppers, sliced
  • 500g sweet potatoes, chopped
  • 6 salad tomatoes, wedged
  • 500g large carrots, chopped
  • 100ml single cream
  • 800ml vegetable stock
  • Fresh rosemary, dried sage, Italian herbs
  • Extra virgin olive oil, salt and pepper

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Combine all vegetables on a baking tray with olive oil, salt, pepper, sage, and Italian herbs; toss well.
  3. Roast for about 30 minutes until tender and slightly charred.
  4. Transfer veggies to a large pot; add stock and rosemary. Blend until smooth.
  5. Stir in cream; adjust seasoning as needed and gently heat before serving.
