- 4 (7 oz) salmon fillets
- 2 tbsp butter
- 2 garlic cloves (minced)
- 1 shallot (chopped)
- 1/4 cup white wine
- 3 oz cream cheese
- 5 oz fresh baby spinach
- 1 lb puff pastry
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions
- Heat butter in a frying pan over medium heat. Add chopped shallots and minced garlic; sauté until translucent.
- Increase heat to high, add white wine, and let cook for about 5 minutes. Stir in cream cheese until melted.
- Add fresh spinach and stir until wilted. Remove from heat and allow to cool.
- Roll out puff pastry on a floured surface; cut into four pieces.
- Season salmon fillets with salt and pepper, placing one on each pastry piece. Divide spinach mixture evenly over salmon.
- Brush edges of pastry with egg wash and fold over salmon, sealing well.
- Place on a baking sheet lined with parchment paper, make slits on top, brush with egg wash again, and bake at 390°F for 25-30 minutes until golden brown.
