  • 4 (7 oz) salmon fillets
  • 2 tbsp butter
  • 2 garlic cloves (minced)
  • 1 shallot (chopped)
  • 1/4 cup white wine
  • 3 oz cream cheese
  • 5 oz fresh baby spinach
  • 1 lb puff pastry
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Heat butter in a frying pan over medium heat. Add chopped shallots and minced garlic; sauté until translucent.
  2. Increase heat to high, add white wine, and let cook for about 5 minutes. Stir in cream cheese until melted.
  3. Add fresh spinach and stir until wilted. Remove from heat and allow to cool.
  4. Roll out puff pastry on a floured surface; cut into four pieces.
  5. Season salmon fillets with salt and pepper, placing one on each pastry piece. Divide spinach mixture evenly over salmon.
  6. Brush edges of pastry with egg wash and fold over salmon, sealing well.
  7. Place on a baking sheet lined with parchment paper, make slits on top, brush with egg wash again, and bake at 390°F for 25-30 minutes until golden brown.
