Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, and vanilla extract in a small bowl until smooth. Transfer to a piping bag and refrigerate.
  2. In another bowl, whisk together flour, baking soda, baking powder, and salt. In a large bowl, cream together softened butter with granulated and brown sugars until fluffy. Add the egg and vanilla extract, then mix well. Gradually incorporate dry ingredients until just combined.
  3. Assemble cookies by flattening tablespoons of dough, adding cheesecake filling in the center, shaping the dough around it, then chilling for 20–30 minutes.
  4. Preheat oven to 350°F (175°C) and bake cookies for 10–12 minutes or until edges are golden. Cool on wire racks before adding toppings.
