  • 4 large egg yolks
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare the pie crust in a 9-inch pie pan and chill while making the filling.
  2. In a medium saucepan, combine heavy cream, brown sugar, cornstarch, and salt over medium heat. Stir continuously until boiling and slightly thickened.
  3. Remove from heat and temper egg yolks by gradually whisking in hot cream mixture. Once combined, pour back into the saucepan.
  4. Stir in honey and vanilla extract until smooth.
  5. Pour the custard mixture into the chilled pie crust.
  6. Bake for 40-45 minutes until slightly jiggly in the center.
  7. Allow to cool to room temperature before refrigerating until firm.
  8. Sprinkle flaky sea salt on top before serving.
