  • 2 bay leaves
  • 1 pound jumbo shrimp (peeled and deveined)
  • 12 ounces lump crab meat (checked for shells)
  • 1/4 cup quality dry sherry
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon white pepper
  • Salt to taste
  • Fresh chives (minced)
  • Fresh tarragon (chopped)
  • Crème fraîche (optional)
  • Extra shrimp for garnish

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Add diced onion and minced celery; sauté for 5 minutes until softened.
  2. Stir in minced garlic and cook until fragrant (about 1 minute).
  3. Sprinkle flour over the mixture and cook while stirring for 2 minutes.
  4. Gradually whisk in warmed milk and seafood stock to prevent lumps.
  5. Mix in tomato paste, bay leaves, and Old Bay seasoning; simmer for 5 minutes.
  6. Stir in heavy cream and simmer until slightly thickened (about 5 minutes).
  7. Add shrimp; cook until pink (3–4 minutes). Then gently fold in crab meat and sherry, heating through for 2 more minutes.
  8. Remove bay leaves, adjust seasoning with salt and white pepper before serving hot with fresh herbs.
