- 2 pounds potatoes
- 1 pound ground beef
- 4 tablespoons butter
- ¼ cup sour cream
- ½ cup beef broth
- 2 cups frozen peas, carrots, and corn medley
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- ¼ to ½ cup milk
- 2 cloves garlic (minced)
- 1 small onion (diced)
- 2 tablespoons flour
- 1 teaspoon rosemary
- ½ teaspoon thyme
- 1 bay leaf
Instructions
- Preheat oven to 350°F.
- Boil peeled potatoes until fork-tender; drain.
- Mash potatoes with butter, sour cream, milk, salt, and pepper until smooth.
- In a skillet over medium heat, brown ground beef with diced onions and minced garlic; drain excess grease.
- Add frozen vegetables and cook for 5-7 minutes.
- Stir in flour, then add beef broth, tomato paste, Worcestershire sauce, rosemary, thyme, and bay leaf; simmer for about 10 minutes.
- Spread meat mixture in a greased 9×13 baking dish; top with mashed potatoes.
- Bake for about 30 minutes until golden brown.
