  • 3 tablespoons avocado oil
  • ½ small onion (diced)

  • 3 large eggs (beaten)
  • 3 tablespoons tamari soy sauce or coconut aminos
  • 2 teaspoons toasted sesame oil

Instructions

  1. Season shrimp with kosher salt and ground white pepper in a bowl. Set aside.
  2. Heat avocado oil in a wok over medium-high heat. Sear shrimp for 1-2 minutes until pink; remove from pan.
  3. Add onion, green scallion whites, garlic, and ginger; stir-fry until fragrant.
  4. Add frozen peas and carrots; stir-fry for 1-2 minutes.
  5. Move veggies to one side, scramble beaten eggs on the other side until soft, then mix everything together.
  6. Stir in cooked rice, shrimp, tamari soy sauce or coconut aminos, and sesame oil; stir-fry for another 2 minutes.
