  • 8 small corn tortillas
  • 1/2 small purple cabbage, shredded
  • 1 large avocado, diced
  • 4 oz Cotija cheese, grated
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 ½ tablespoons lime juice
  • ¾ teaspoon garlic powder
  • ¾ teaspoon Sriracha sauce
  • 1 garlic clove, pressed or minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil

Instructions

  1. In a medium bowl, mix shrimp with minced garlic and seasonings (salt, pepper, cumin, cayenne).
  2. Heat olive oil in a non-stick pan over medium-high heat. Cook the seasoned shrimp for 1-2 minutes per side until pink and opaque.
  3. Toast tortillas on a skillet or open flame until lightly charred.
  4. Prepare toppings: slice cabbage, dice avocado and onion, chop cilantro.
  5. In a small bowl, whisk together sauce ingredients until smooth.
  6. Assemble tacos by layering shrimp and toppings on tortillas; drizzle with sauce.
