  • 1 onion (cut into ¾-inch pieces)
  • 1 bell pepper (cut into ¾-inch pieces)
  • 4 fully cooked sausages (sliced)
  • 2 ½ tbsp olive or avocado oil
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 1 tsp garlic (minced)
  • Fresh basil (for garnish optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Add sliced sausages and sauté until browned on both sides. Remove from pan.
  3. Lower heat to medium and add the remaining olive oil.
  4. Add zucchini, onion, and bell pepper. Sprinkle with seasonings and stir well.
  5. Cook until vegetables are tender (about 5 minutes).
  6. Return sausages to the skillet along with minced garlic. Stir together and cover to meld flavors for a few minutes.
