- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 1/2 cup beef broth
- Fresh herbs (thyme and rosemary)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 tbsp olive oil (for searing, optional)
- 1/2 tsp salt (for potatoes)
- 1/4 tsp black pepper (for potatoes)
- 1 tbsp olive oil (for potatoes)
- 1 tsp dried thyme or 1 tbsp fresh thyme
- 1 tsp dried rosemary or 1 tbsp fresh rosemary, chopped
- 1 tbsp Worcestershire sauce
- 2 tbsp fresh parsley, chopped
- Grated Parmesan cheese
Instructions
- Cut the beef into 1-inch cubes and halve or quarter the potatoes.
- Season the beef with salt, black pepper, garlic powder, and smoked paprika.
- (Optional) Sear the seasoned beef in a skillet over medium-high heat until browned.
- Place beef in the slow cooker and add potatoes on top.
- In a bowl, mix melted butter, garlic, thyme, rosemary, beef broth, Worcestershire sauce, salt, and pepper. Pour over the meat and potatoes.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until tender.
- Stir gently before serving and garnish with fresh parsley.
