  • 2 cloves garlic
  • 1 packet taco seasoning mix
  • 1 can diced tomatoes with green chilies
  • 1 can black beans
  • 1 can corn
  • 1 cup salsa
  • 6 tortillas (flour or corn)
  • 1 cup shredded Mexican cheese
  • Fresh cilantro for garnish

Instructions

  1. Brown the ground beef in a skillet; drain fat.
  2. Sauté diced onions and garlic until softened.
  3. Stir in taco seasoning and diced tomatoes; combine well.
  4. In the slow cooker, layer salsa, tortilla strips, half the beef mixture, black beans, corn, followed by another layer of tortillas and remaining ingredients.
