  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare an 8×8 inch baking pan with parchment paper.
  2. In a food processor, blend graham crackers and sugar until fine crumbs form. Mix in melted butter until combined. Press into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes until golden brown. Set aside to cool.
  4. In a bowl, whisk together vegetable oil, sugar, eggs, and vanilla extract. Stir in cocoa powder, flour, salt, and baking powder until just combined. Fold in chocolate chips.
  5. Pour brownie batter over cooled crust and spread evenly. Bake for 30-40 minutes until the center is set.
  6. Remove from oven, sprinkle mini marshmallows on top, and broil for about 2 minutes until golden brown.
  7. Allow brownies to cool for at least 30 minutes before cutting into squares.
