  • ¼ cup non-dairy or regular dairy milk (warmed to 110℉)
  • 1 ½ teaspoons instant yeast
  • 2 teaspoons granulated sugar
  • 2 cups + 1 tablespoon all-purpose flour
  • 200 grams (about ¾ cup) sourdough discard (unfed, at room temperature)
  • 1 egg (lightly beaten)
  • 2 tablespoons unsalted butter (melted)
  • 7 tablespoons unsalted butter (softened)
  • Fresh herbs (parsley or rosemary)
  • Garlic powder
  • Kosher salt

Instructions

  1. In a stand mixer bowl, combine warmed milk, yeast, and sugar. Mix in flour, sourdough discard, beaten egg, chopped herbs, salt, and garlic powder. Add melted butter gradually while mixing until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 3–4 minutes until smooth and slightly tacky.
  3. Place the dough in a greased bowl, cover with plastic wrap, and let rise until doubled in size (60–90 minutes).
  4. Prepare the topping by mixing softened butter with herbs, garlic powder, and salt. Reserve some for later.
  5. Divide the dough into 12 equal pieces; flatten each piece and spread with topping before folding.
  6. Arrange the pieces in a greased loaf pan and let rise again for 30–45 minutes.
  7. Preheat oven to 350℉ and bake for about 30–40 minutes until golden brown.
  8. Brush with reserved topping mixture before cooling briefly in the pan.
