Ingredients
- 1 lb spaghetti
- 1 can olives (sliced)
- 10 oz cherub or grape tomatoes (halved)
- 1 cucumber (sliced)
- 1 large carrot (grated)
- 1 avocado (diced)
- ½ cup pepperoncini (sliced)
- 1 Tbs Mrs. Dash seasoning salt
- 1 Tbs lemon pepper
- 8 oz roasted red pepper vinaigrette
Instructions
- Cook spaghetti in salted boiling water until al dente. Drain and rinse under cold water.
- Prepare vegetables: halve tomatoes, slice cucumber and olives, grate carrot, dice avocado, and slice pepperoncini.
- In a large bowl, mix cooled spaghetti with prepared vegetables.
- Add seasonings and vinaigrette; toss well to combine.
- Cover and chill for at least 2 hours before serving.
