  • 3/4 cup canned pumpkin
  • 2 large eggs
  • 4 oz cream cheese (softened)
  • 1/2 cup canola oil
  • 1/2 tsp baking soda

  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1 pinch all spice
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar (for cream cheese filling)
  • 2 tsp milk
  • 1 tsp flour (for cream cheese filling)
  • 1 tsp butter (for greasing)
  • 2 tbsp pumpkin seeds (for topping)
  • 1/2 tbsp brown sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin.
  2. In a bowl, whisk together flour, sugar, baking soda, cinnamon, cloves, nutmeg, salt, and other dry ingredients.
  3. In another bowl, mix canola oil, pumpkin, eggs, and vanilla extract until smooth.
  4. Combine the wet ingredients into the dry mixture until just melded; avoid overmixing.
  5. Prepare the cream cheese filling by mixing softened cream cheese with sugar, milk, flour, and vanilla until smooth.
  6. Fill muffin cups halfway with batter. Add a tablespoon of cream cheese filling in the center and top off with more batter.
  7. Sprinkle pumpkin seeds on top and bake for about 20 minutes or until golden and cooked through.
  8. Cool briefly before serving.
