Ingredients
- 1 & 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 3/4 cup canned pumpkin
- 2 large eggs
- 4 oz cream cheese (softened)
- 1/2 cup canola oil
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp nutmeg
- 1 pinch all spice
- 1 tsp salt
- 1 tsp vanilla extract
- 2 tbsp granulated sugar (for cream cheese filling)
- 2 tsp milk
- 1 tsp flour (for cream cheese filling)
- 1 tsp butter (for greasing)
- 2 tbsp pumpkin seeds (for topping)
- 1/2 tbsp brown sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease your muffin tin.
- In a bowl, whisk together flour, sugar, baking soda, cinnamon, cloves, nutmeg, salt, and other dry ingredients.
- In another bowl, mix canola oil, pumpkin, eggs, and vanilla extract until smooth.
- Combine the wet ingredients into the dry mixture until just melded; avoid overmixing.
- Prepare the cream cheese filling by mixing softened cream cheese with sugar, milk, flour, and vanilla until smooth.
- Fill muffin cups halfway with batter. Add a tablespoon of cream cheese filling in the center and top off with more batter.
- Sprinkle pumpkin seeds on top and bake for about 20 minutes or until golden and cooked through.
- Cool briefly before serving.
