  • ½ cup powdered sugar
  • 1 cup cold butter
  • ½ cup granulated sugar
  • 1 cup brown sugar (tightly packed)
  • 2 eggs
  • 3 ⅔ cups gluten-free flour (or all-purpose flour)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ⅓ cup finely diced strawberries

Instructions

  1. In a stand mixer, beat softened cream cheese with powdered sugar until creamy.
  2. Scoop out teaspoon-sized balls of the cream cheese mixture and freeze on a parchment-lined baking pan.
  3. In the same stand mixer, combine cold butter, granulated sugar, and brown sugar; beat until smooth.
  4. Add eggs and mix well; then incorporate remaining dry ingredients except strawberries to form dough.
  5. Gently fold in diced strawberries and refrigerate dough for about 30 minutes.
  6. Preheat oven to 350°F. Scoop large balls of dough onto lined baking pan, creating an indent in each ball.
  7. Place frozen cream cheese ball into each indent and seal with cookie dough around it.
  8. Bake for 11 to 12 minutes until set but soft in the center. Allow cooling before serving.
