- 2 medium butternut squash
- 2 tbsp olive oil
- 4 oz cream cheese
- 1 cup shredded Parmesan cheese
- 2 cups fresh spinach (or 1 cup frozen)
- 8 strips cooked bacon, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Cut each squash in half lengthwise and scoop out seeds. Drizzle olive oil and season with salt and pepper.
- Place cut side down on a baking sheet and roast for about 40 minutes until tender.
- In a sauté pan, heat olive oil and wilt spinach. In a mixing bowl, combine cream cheese, Parmesan, wilted spinach, and half the bacon.
- Flip roasted squash cut side up and scoop out some flesh to make room for the filling. Stuff each half with the spinach mixture.
- Top with remaining bacon and bake for another 15 minutes at 400°F (200°C). Optionally broil for 3-5 minutes for a crispy topping.
