  • 2 medium butternut squash
  • 2 tbsp olive oil
  • 4 oz cream cheese
  • 1 cup shredded Parmesan cheese
  • 2 cups fresh spinach (or 1 cup frozen)
  • 8 strips cooked bacon, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut each squash in half lengthwise and scoop out seeds. Drizzle olive oil and season with salt and pepper.
  2. Place cut side down on a baking sheet and roast for about 40 minutes until tender.
  3. In a sauté pan, heat olive oil and wilt spinach. In a mixing bowl, combine cream cheese, Parmesan, wilted spinach, and half the bacon.
  4. Flip roasted squash cut side up and scoop out some flesh to make room for the filling. Stuff each half with the spinach mixture.
  5. Top with remaining bacon and bake for another 15 minutes at 400°F (200°C). Optionally broil for 3-5 minutes for a crispy topping.
