  • 500 g boneless skinless chicken breast, diced
  • 6 tablespoons cornstarch
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 onion, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 432 g tin pineapple pieces (drained)

Instructions

  1. In a mixing bowl, season chicken with salt, pepper, and cornstarch; toss to coat evenly.
  2. Heat vegetable oil in a wok or large frying pan over medium-high heat. Fry the chicken in batches until golden brown (about 5-7 minutes); remove and set aside.
  3. In the same pan, stir-fry onion and bell peppers for 3-4 minutes until softened.
  4. In a bowl, mix ketchup, cider vinegar, brown sugar, soy sauce, and reserved pineapple juice; add to the vegetables and simmer.
  5. Return chicken and drained pineapple to the pan; stir well and cook for another 2-3 minutes until heated through.
