Ingredients

  • 2 pounds chicken breast
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Top with pineapple chunks.
  3. In a mixing bowl, whisk together soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes until well combined.
  4. Pour the sauce mixture over the chicken and pineapple.
  5. Cover and cook on low for 4 to 6 hours or until the chicken is fully cooked and tender.
  6. Shred the chicken with two forks and return it to the crockpot.
  7. Mix cornstarch with water until smooth; add to the sauce in the crockpot and stir well.
  8. Cook on high for an additional 10 to 15 minutes to thicken before serving.
