  • 1 pound rotini pasta
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 2 cups shredded Fiesta blend cheese
  • 16 ounces Catalina dressing
  • 3 tablespoons sour cream
  • 9 ounces crushed Nacho Cheese Doritos
  • 2 cups shredded iceberg lettuce

Instructions

  1. Cook rotini pasta according to package directions in a large pot of boiling water. Drain and rinse with cold water.
  2. In a skillet over medium heat, brown the ground beef; drain excess grease. Stir in taco seasoning with ¼ cup water and cook for an additional 5 minutes.
  3. In a large mixing bowl, combine cooked pasta, seasoned beef, black beans, corn, cherry tomatoes, and cheese.
  4. Whisk together Catalina dressing and sour cream in a small bowl; pour over the pasta mixture and gently stir until coated.
  5. If serving immediately, fold in crushed Doritos and shredded lettuce; garnish with cilantro.
