- 1 pound rotini pasta
- 1 pound lean ground beef
- 1 packet taco seasoning
- 15 ounces canned black beans (drained and rinsed)
- 8 ounces canned corn (drained)
- 2 cups halved cherry tomatoes
- 2 cups shredded Fiesta blend cheese
- 16 ounces Catalina dressing
- 3 tablespoons sour cream
- 9 ounces crushed Nacho Cheese Doritos
- 2 cups shredded iceberg lettuce
Instructions
- Cook rotini pasta according to package directions in a large pot of boiling water. Drain and rinse with cold water.
- In a skillet over medium heat, brown the ground beef; drain excess grease. Stir in taco seasoning with ¼ cup water and cook for an additional 5 minutes.
- In a large mixing bowl, combine cooked pasta, seasoned beef, black beans, corn, cherry tomatoes, and cheese.
