  • 1 lb ground beef (85% lean)
  • 1 medium onion (finely diced)
  • 4 oz canned green chiles
  • 1 oz taco seasoning
  • 15 oz black beans (rinsed & drained)
  • 10 oz frozen corn
  • 10 oz red enchilada sauce
  • 32 oz frozen tater tots
  • 3 cups shredded Mexican cheese blend

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a baking dish with non-stick spray.
  2. In a large skillet, sauté the ground beef, onion, and optional red pepper over medium heat until browned. Add minced garlic towards the end and drain excess fat.
  3. Stir in green chiles, taco seasoning, black beans, corn, and half of the cheese until well combined.
  4. Transfer the mixture to the baking dish. Drizzle with enchilada sauce and layer tater tots on top.
  5. Bake for 30–40 minutes until tater tots are golden brown. Sprinkle remaining cheese on top and bake for an additional 2–3 minutes until melted.
