  • 2 x 5oz cans of drained tuna
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna with onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Mix well and season with salt and pepper.
  2. Heat a non-stick skillet over medium heat. Spread butter on one side of each slice of bread.
  3. Place one slice of bread butter-side down in the skillet. Spoon about 2 tablespoons of the tuna salad on top. Top with another slice of bread (buttered-side up).
  4. Cook until the bottom is golden brown; turn carefully using a spatula to brown the other side until golden.
