Ingredients
- 2 x 5oz cans of drained tuna
- 1 medium onion, chopped
- 1/2 stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil
- 1/3 cup shredded mozzarella cheese
- Sliced bread
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna with onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Mix well and season with salt and pepper.
- Heat a non-stick skillet over medium heat. Spread butter on one side of each slice of bread.
- Place one slice of bread butter-side down in the skillet. Spoon about 2 tablespoons of the tuna salad on top. Top with another slice of bread (buttered-side up).
- Cook until the bottom is golden brown; turn carefully using a spatula to brown the other side until golden.
