Ingredients

  • 20 oz cheese tortellini (uncooked)
  • 10 oz cherry tomatoes (halved)
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tbsp balsamic vinegar
  • 34 garlic cloves (minced)
  • 3/4 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in boiling water according to package instructions until al dente. Drain and rinse under cool water.
  2. While tortellini cools, chop cherry tomatoes, spinach, basil, and mince garlic.
  3. In a large bowl, combine the cooled tortellini, vegetables, mozzarella, and garlic.
  4. In a separate bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over the salad and toss well.
  5. Chill in the refrigerator for at least 30 minutes before serving.
