- 5–7 cloves garlic, minced
- 1 lb ground turkey
- 28 oz canned petite diced tomatoes
- 16 oz canned tomato sauce
- 1/2 cup chicken broth
- 1 large sweet potato, cubed into 1-inch pieces (~12 oz)
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1 tbsp granulated sugar
- 1 cup frozen corn
- Salt, to taste
- Black pepper, to taste
- 1/4 cup cilantro, chopped
- 1/3 cup cheddar cheese, shredded
- 2 avocados, sliced
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until fragrant.
- Add ground turkey, breaking it apart as it cooks; season lightly with salt and pepper until no longer pink.
- Stir in diced tomatoes, tomato sauce, chicken broth, cubed sweet potatoes, chili powder, smoked paprika, cumin, and sugar. Bring to a boil.
- Reduce heat to medium and let simmer for about 15 minutes or until sweet potatoes are fork-tender.
