  • 6 large russet baking potatoes
  • 12 oz bacon
  • 1 cup half and half or heavy cream
  • 1 container (8 oz) sour cream
  • 3 cups shredded sharp cheddar cheese
  • ½ cup salted butter (plus extra for topping)
  • Dry ranch dressing mix
  • garlic salt
  • black pepper
  • green onions

Instructions

  1. Preheat oven to 450°F. Scrub potatoes, rub with vegetable oil, and sprinkle with salt and pepper. Pierce with a knife.
  2. Bake potatoes on a sheet pan for 60–75 minutes until tender. Lower temperature to 350°F.
  3. Cook bacon in a skillet until crispy; drain and crumble.
  4. Cut baked potatoes in half, mash in a large bowl until chunky.
  5. Mix in sour cream, half and half, melted butter, ranch seasoning, garlic salt, and black pepper until combined.
  6. Fold in bacon, 2 cups of cheese, and green onions.
  7. Pour into a greased baking dish, top with remaining cheese and dot with sliced butter.
  8. Bake at 350°F for 35–45 minutes until golden brown.
