Instructions
- Warm dairy-free milk; mix with active dry yeast and let froth.
- Combine melted dairy-free butter and caster sugar into the yeast mixture.
- Sift plain flour and salt; add gradually to the wet mix until dough forms.
- Knead on a floured surface for 8–10 minutes until smooth.
- Let rise in a warm place for about 1 hour or until doubled in size.
- Prepare lemon curd by cooking coconut milk, sugar, cornflour, lemon juice, zest, and turmeric until thickened.
- Roll out the dough into a rectangle; spread lemon curd evenly and roll tightly.
- Cut into equal sections; place on a lined baking tray and let rise for another 30 minutes.
- Preheat oven to 180°C (350°F) and bake for 25–30 minutes until golden brown.
