  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup yellow onion, chopped
  • 3 garlic cloves, minced
  • 32 oz vegetable broth
  • 30 oz canned diced tomatoes (with liquid)
  • 3 Yukon gold potatoes, chopped
  • 1 cup green beans, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 cup frozen corn
  • Optional: 1 cup frozen peas

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add carrots, celery, and onion; sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cook for another 30 seconds until fragrant.
  3. Add vegetable broth, diced tomatoes, potatoes, green beans, Italian seasoning, salt, and pepper. Bring to a boil and then reduce heat to simmer for about 8-10 minutes until veggies are tender.
  4. Stir in frozen corn and peas; cook for an additional 2 minutes until heated through.
