- 1/2 cup unsweetened applesauce
- 1 3/4 cups non-dairy milk
- 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- Optional: 1 cup blueberries
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- Prepare flax eggs by mixing ground flaxseed with water; let thicken for about 5 minutes.
- In a large bowl, combine dry ingredients: rolled oats, nuts, cinnamon, nutmeg, baking powder, and salt.
- In another bowl, whisk together wet ingredients: applesauce, non-dairy milk, flax eggs, maple syrup, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Fold in blueberries or other fruits if desired. Transfer to the prepared pan and top with sliced banana if using.
- Bake for 35–45 minutes until the center is set. Let cool before serving.
