Ingredients
- 1½ cups cooked cannellini or butter beans
- 2 medium carrots, diced
- 1 cup celery, diced
- 1 cup red onion, diced
- 3–4 cloves garlic, minced
- 2 cups chopped fresh kale
- 1 medium sweet potato, diced
- 8 cups vegetable or chicken stock
- ½ cup uncooked quinoa
- 2 tbsp extra virgin olive oil
- 2 bay leaves
- 2 tsp fresh thyme leaves
- Sea salt
- Freshly ground pepper
Instructions
- If using dry beans, soak overnight or use the quick soak method. Drain.
- In a large pot, combine soaked beans and fresh water (8 cups). Simmer with aromatics for about 45 minutes until tender.
- In a skillet over medium heat, sauté carrots, celery, red onion, garlic, bay leaves, and thyme in olive oil until softened (about 8 minutes).
- Add sautéed vegetables to the pot with beans. Stir in celeriac, sweet potato, canned tomatoes, and quinoa. Bring to a boil; reduce heat and simmer for 20 minutes.
- Remove bay leaves; season with salt and pepper. Stir in chopped kale until wilted before serving.
