  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons avocado oil
  • 6 tablespoons softened butter
  • 6 garlic cloves (minced)
  • 1 teaspoon finely chopped fresh rosemary
  • 1 teaspoon finely chopped fresh thyme

Instructions

  1. Remove the beef tenderloin from the fridge and allow it to reach room temperature for 1 to 2 hours.
  2. In a small bowl, combine softened butter, minced garlic, chopped rosemary, and thyme.
  3. Preheat your oven to 425°F (220°C). Season the beef generously with salt and pepper.
  4. Heat avocado oil in a cast iron pan over medium-high heat. Sear the beef on all sides until browned (about 10 minutes).
  5. Spread the herb butter mixture over the top of the beef tenderloin and transfer the pan to the oven.
  6. Roast for 15 to 20 minutes or until desired doneness is reached (aim for an internal temperature of about 130°F for medium-rare).
