  • 3 3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter
  • Vegetable oil (for frying)
  • 1/2 cup powdered sugar

Instructions

  1. Prepare the yeast by combining warm water, yeast, and half the sugar; let it sit until bubbly.
  2. Mix flour and salt in a bowl separately.
  3. Combine bubbly yeast mixture with milk, vanilla, remaining sugar, and egg; whisk until smooth. Gradually mix in half of the flour.
  4. Add remaining flour while kneading on medium speed until smooth; incorporate butter well.
  5. Allow dough to rise in an oiled bowl for at least two hours.
  6. Heat oil to 360°F in a deep pot.
  7. Roll out dough into a rectangle and cut into squares.
  8. Fry beignets until puffed and golden on both sides; drain on paper towels.
  9. Dust with powdered sugar before serving.
