  • 1011 strips bacon
  • 2 heads broccoli (about 1.5 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups Miracle Whip or mayonnaise
  • 1 lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons white wine vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and cook the bacon on a baking sheet until crispy (about 20 minutes). Set aside to cool and chop into bite-sized pieces.
  2. In a large mixing bowl, whisk together the dressing ingredients: Miracle Whip or mayonnaise, lemon zest and juice, white wine vinegar, sugar, kosher salt, black pepper, dry mustard, and cayenne pepper until smooth.
  3. Chop broccoli into small florets and add to the bowl with the dressing.
  4. Stir in cranberries, sunflower seeds, cheddar cheese, red onion, and most of the chopped bacon (reserve some for garnish).
  5. Combine well until everything is coated in the dressing. Chill for at least 20 minutes before serving.
