Instructions

  1. Begin by browning the butter in a saucepan over medium heat until it turns amber.
  2. Chill the browned butter in the refrigerator for about 20 minutes.
  3. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  4. In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  5. In another large bowl, mix the chilled brown butter with dark brown sugar until clumpy.
  6. Add egg yolk, maple syrup, vanilla extract, and pumpkin puree; whisk until smooth.
  7. Fold in the dry ingredients until just combined; chill if too soft.
  8. Scoop dough into balls and roll in cinnamon-sugar before placing on the baking sheet.
