Ingredients

  • 1 small butternut squash (peeled and chopped)
  • 2 sweet potatoes (peeled and chopped)
  • 1 yellow onion (sliced)
  • 3 cloves garlic (peeled)
  • 2 tablespoons olive oil
  • 400 ml tin full-fat coconut milk
  • 750 ml vegetable or chicken stock
  • Ground cumin
  • Cinnamon
  • Chilli powder
  • Chilli flakes
  • Salt and pepper

Instructions

  1. Peel and chop the butternut squash and sweet potatoes. Slice the onion and peel the garlic.
  2. In a large pot over medium heat, warm the olive oil. Sauté the onion until soft; add minced garlic until fragrant.
  3. Stir in the chopped squash and sweet potatoes to combine with aromatics.
  4. Sprinkle in cumin, cinnamon, chilli powder, and chilli flakes; mix well.
  5. Pour in stock; bring to a boil then reduce heat to low. Cover and simmer for about 20 minutes until tender.
  6. Blend soup until smooth using an immersion blender or transfer to a traditional blender carefully.
  7. Stir in coconut milk; season with salt and pepper to taste.
  8. Serve hot, garnished with reserved coconut milk if desired.
