Instructions
- Preheat oven to 350°F (175°C) and line muffin tins with paper liners.
- In a large mixing bowl, whisk together the sugar, flour, cinnamon, baking soda, salt, coconut, and walnuts until well combined.
- Fold in the grated zucchini and carrots until mixed evenly.
