- ½ cup (115g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon pineapple juice (optional, for extra flavor)
Instructions
- Preheat oven to 350°F (175°C). Grease your cake pans.
- In a large bowl, whisk together granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Stir in grated carrots and crushed pineapple.
- In another bowl, mix all-purpose flour, baking soda, baking powder, cinnamon, and salt. Gradually blend into wet ingredients until just combined.
