- 100 g active starter
- 300 g water
- 100 g canned pumpkin purée
- 3 tbsp honey or maple syrup
- 1 tbsp pumpkin spice
- 12 g sea salt
- 500 g white bread flour

- Prepare the starter by mixing mature starter, flour, and tepid water; let sit for about 8 hours.
- Combine active starter with water, then add pumpkin purée, honey/maple syrup, spices, sea salt, and flour; mix until shaggy.
- Knead on a floured surface for about 10 minutes until smooth.
