  • 50 g tepid water
  • 100 g active starter
  • 300 g water
  • 100 g canned pumpkin purée
  • 3 tbsp honey or maple syrup
  • 1 tbsp pumpkin spice
  • 12 g sea salt
  • 500 g white bread flour

Instructions

  1. Prepare the starter by mixing mature starter, flour, and tepid water; let sit for about 8 hours.
  2. Combine active starter with water, then add pumpkin purée, honey/maple syrup, spices, sea salt, and flour; mix until shaggy.
  3. Knead on a floured surface for about 10 minutes until smooth.
  4. Place in an oiled bowl, cover, and let rise for about 4 hours until doubled.
  5. Shape into a round loaf resembling a pumpkin and allow to rest on parchment paper for an hour.
  6. Preheat oven to 450°F (232°C) and bake for approximately 45 minutes.
