  • 3 banana shallots (finely diced)
  • 3 garlic cloves (minced)
  • 4 fresh tomatoes (diced)
  • 120ml dry white wine
  • 200g brown crab meat
  • 200g white crab meat
  • 400g linguine (cooked al dente)
  • Fresh parsley and red pepper flakes for garnish

Instructions

  1. In a large chef's pan, heat the butter and olive oil until melted.
  2. Sauté the shallots and garlic over low heat for five minutes until softened.
  3. Add the diced tomatoes and cook for one minute.
  4. Stir in the white wine and lemon juice; simmer for five minutes.
  5. Mix in both types of crab meat until well combined.
  6. Cook linguine according to package instructions; reserve some pasta water before draining.
  7. Combine the cooked linguine with the sauce and add parmesan cheese; use reserved pasta water as needed for consistency.
  8. Toss with chopped parsley and serve garnished with red pepper flakes.
